tell you, mom gets creative and keeps it interesting.”
Raw Kale Salad
raw kale or collards, clean, chopped
Orange juice, freshly squeezed
Nama Shoyu or Tamari (top quality soy sauce)
extra virgin olive oil
garlic, peeled
stone ground mustard or spicy mustard
ground cumin
crushed red peppers
1 lb
Dressing:
½ cup
¼ cup
½ cup
3 cloves
½ cup
1 tsp.
¼ tsp
Place kale in a large mixing bowl and refrigerate.
In a high-speed blender, combine all of the ingredients for the dressing
and blend until smooth.
Pour ¼ - ½ cup over the salad, toss to mix well, let greens marinate in
dressing a few hours before serving.
Serve with grilled chicken breast and broiled corn on the cob yummy!
This dressing is delicious on spinach and other salads. Use on cole slaw
instead of mayo. And remember salad dressings also make delicious
marinades for chicken and fish.
The Nama Shoyu/tamari use it instead of salt or like you would soy
sauce. Soy sauce is not restricted to Asian recipes.
